I thought I'd try this recipe to use up all the overripe bananas, I'd forgotten to eat and surprisingly, it tastes quite good. It's not too sweet, it's moist and it's good for you! What's not to like?!!!

I thought I'd try this recipe to use up all the overripe bananas, I'd forgotten to eat and surprisingly, it tastes quite good. It's not too sweet, it's moist and it's good for you! What's not to like?!!!

Line a loaf tin with greaseproof paper and preheat the oven to 175°C/350°F

In a bowl, put the coconut flour, baking powder, bicarbonate of soda and cinnamon and mix until combined.

In another bowl, whisk the eggs and then add the mashed banana. Mix until you have a smooth batter and then whisk in the coconut oil and vanilla.

Add the banana mixture to the flour mixture and stir until well mixed.

Scrape the batter into the loaf tin and bake for 45 -55 minutes. If a knife is inserted and it comes out clean, it means the loaf is cooked.
