Place the large potatoes in a pot with a lid, cover with salted water, and cook until tender but not falling apart. Once cooked, cut a horizontal slice off one side of each potato to make a lid. Carefully scoop out the inside of each potato with a small spoon, placing the scooped-out potato into a separate pot. Repeat with all the potatoes.

Season the potato pulp with salt and pepper, then mash with a potato masher. Add plenty of margarine and 1 tablespoon of sour cream per potato. Finally, add chopped green onion tops and mix well. Use this mixture to refill the potato shells. When ready to serve, reheat the stuffed potatoes in the microwave or oven.

Always start cooking the potatoes in cold water; otherwise, they may stay hard in the center.
