Vegan Cookies with Oats, Honey, and Cinnamon

Easy and vegan cookies!! This recipe is by Athina Panou! If you like oats, you should try them!! A few more tips: The dough might be a bit sticky, but that's how it should be. Cinnamon is optional; if you don't like it, you can skip it. Makes about 12 pieces and keeps for 5-6 days (if they last!) well-sealed in a container! Be careful with baking so they don't burn; mine got a little too brown! I used less sugar, about 1/3 cup (60 grams), and they turned out great!

Preheat the oven to 350°F (180°C).

In a bowl, mix the flour, baking powder, cinnamon, sugar, and oats.

In a small bowl, mix the corn oil with the honey until the honey is as dissolved as possible.

Pour the liquid mixture into the dry ingredients and knead by hand until everything is moistened.

Place parchment paper on a baking sheet, and form walnut-sized balls of dough, leaving space between them.

Flatten them with your hand or a spatula and bake for 12-14 minutes until golden.

After baking, leave them on the baking sheet for 4-5 minutes, then place them on a rack to cool.
