Very quick and tasty left over version of another recipe of mine. I had some left over boiled potatoes so I whipped up some supper #italian #pasta #supper #dinner #lunch #vegetarian

250 gsmall tube pasta
Leftover potatoes (or boil some)
500 mlwater
cubeStock
Chopped onions, carrots and celery
Olive oil
to tasteSalt

Steps

Boil kettle. Fry veg gently in oil. Add water, add stock cube. Simmer for 5 mins

Add pasta, stir and cook according to instructions, I guess around 10 mins. Salt to taste. Towards end of cooking time, add potatoes

Less than 20 mins for a tasty supper, add Parmesan if you fancy it :)
