Steps

Take a thick pan, add sugar, ginger juice, water, honey, lemon juice, cinnamon and clove powder.

Let it simmer for 12-13 minutes.

Now check, add a drop into water, if it drop as Round and becomes crunchy or hard, (not chewy, or sticky as chewing gum) then it's ready to add into moulds.

Add into desired shape, if possible use small shapes. And make sure u do it little bit speedy. Otherwise it wouldn't be mould and stick to pan only. Then leave for 1-2 hours and unmold it. Coat with icing sugar and store in airtight container.

Take a thick pan and add sugar, 2-3 spoons water, lemon juice, lemon zest, salt and honey. Let it simmer for 10-12 minutes. Then check the consistency.

That drop will be crystal, not chewy,then it's ready. Now add to moulds and let it cool and set for an hour. Remove from mould and if u like then coat with icing sugar.
