Wash the mushrooms and green pepper and sliced thinly

Heat the oil in a large deep frying pan and fry the 4 to 5 minutes on a medium heat

Add the curry sauce, chicken, salt, chilies and food colouring

Turn up the heat and bring to the boil and continue cooking for about 5 minutes stirring frequently

Turn down the heat slightly and stir in the garam masala, ground Cummin and fenugreek and cook for a further 5 minutes stirring now and again

With the spoon dipped in cold water spoon off any extra oil and sprinkle with green coriander
