I forgot yo get a picture before I started eating it! 🙈 but If I am craving a curry but don't have time to make a proper one or just want a slightly healthier version, this is my go to.

I forgot yo get a picture before I started eating it! 🙈 but If I am craving a curry but don't have time to make a proper one or just want a slightly healthier version, this is my go to.
Steps

Melt the coconut oil in a Wok and fry the onions for 1 minute and add the garlic and ginger. Fry for a further minute
- 2
Add the chicken, peppers and 1tbsp of the Curry powder and stir fry until the chicken has cooked through.

Add the rice, chilli and the rest of the curry powder and cook until the rice has warmed through. Enjoy!
