Fresh spinach vegan pasta

Cooking Instructions

In a food processor blend up the spinach. Incorporate remaining ingredients without the water.

Knead the dough for roughly 10 minutes and add water as necessary. The dough should be the same consistency as playdough.

Cover the dough and let it rest for a minimum of 20 minutes.

Divide the dough into 4 pieces. Roll it out to fit in the smallest setting on the atlas or alternatively roll dough out to thin strands. Going from zero and working to 5. Making sure to brush or sprinkle flour to avoid it sticking.

Feed noodles through the desired shape for the atlas. Air dry and freeze until ready to use. Or use immediately.

To serve, bring a pot of water to boil and generously salt and add a bit of oil. Noodles will cook in 1-3 minutes. Serve and enjoy!

This dish was another special request from my mother, who saw something similar being cooked on TV and asked if I could make it. She failed to record the program and didn't take any notes, though, so all she remembered was that the dish was vegetarian and had mushrooms, spinach, and sour cream. The fact that she knew so little was actually a positive, as I only had to meet a handful of requirements and could otherwise do what I wanted. So I swapped out the sour cream for creme fraiche, for extra richness. And I added shallots and garlic, because I love how they work in cream sauces. And I crisped up a few slices of prosciutto, which I served on the side to meet the vegetarian condition, but would otherwise crumble on top. In the end, the dish turned out great.
