Whenever the rainy season came, my mother loved eating hot rice with pork simmered with pepper. The pork is tender and melts in your mouth, with a savory-sweet flavor and the fragrant heat of black pepper.

Rinse the pork with salt, then cut into bite-sized pieces. Slice the shallots and green onions, reserving the green tops. Marinate the pork with all the seasonings and let it sit for 20 minutes.

Heat a pan and add some cooking oil and a little sugar to make caramel. When the sugar turns reddish-brown, add a bit of minced garlic and sauté until fragrant. Add the pork and stir well. Once it comes to a boil, cover and cook over medium heat. Do not add water; let the pork release its own juices.

Simmer for a while, then check if the pork is tender and the flavor is both savory and sweet. Turn off the heat, sprinkle the green onion tops and black pepper on top. Serve hot with steamed rice and cucumber for a delicious meal.
