Baingan Ka Bharta

Roast the Baigan on low flame for about 6-7 mins till it starts reducing. Then peel off the skin and remove all the seeds from the cooked Baigan.

Then take a Kadhai put it on flame. Pour Mustard oil and when oil is heated properly then put jeera and then chilli, ginger and garlic. After 2 mins put all the chopped onions into the pan and cook it till they get golden brown.

After onions put chopped Tomatoes in it and along with put all the masalas and mix well. And then put the green pea and cover it with a lid. And cook it for 5-7 mins on low flame.

After Peas are cooked, put all the Baigan into the Pan and cooked it for about 5-6 mins till all the masala and Baigan mix well.
