Ingredients

  1. 8Mutton Chop Pieces
  2. 2 tbspCurds
  3. 8Garlic cloves
  4. 1/2 inch Ginger
  5. 1Green Chilli
  6. 1/4 tspTurmeric powder
  7. 1/4 tspBedgi Red Chilli powder
  8. 1/2 tspKashmiri Red Chilli powder
  9. 1/2 tspCoriander powder
  10. 1 tspGaram Masala powder
  11. To TasteSalt
  12. as neededOil For Grilling The Mutton Chops
  13. For the flour paste :
  14. 1/2 tspRice flour
  15. 2 tspWater
  16. For coating the chops :
  17. 1Egg
  18. 1 pinchSalt
  19. as neededBread Crumbs As Required

    To make the Mutton Chops, first thoroughly wash the chop pieces under clean water and set aside to drain.

  2. 2

    When all the water has drained away, transfer to a mixing bowl.

  3. 3

    Grind together the ginger, garlic and the green chilli to get a smooth paste.

  4. 4

    In another bowl, mix together, the ginger garlic green chilli paste, curds, all the spice powders and salt to taste.

  5. 5

    Apply this mixture to the mutton chop pieces, such that each chop is completely coated by the marinade. Keep aside for about an hour.

  6. 6

    After an hour, transfer all the chops along with the marinade to a pressure pan. Without adding any water, cook for 3 whistles on high heat and then on low heat for an additional 5 - 7 minutes.

  7. 7

    When the pressure goes down, open the lid and check whether the mutton chops are fully cooked.

  8. 8

    Transfer these cooked chops to a plate and reserve the water released by the chops, in the pan itself.

  9. 9

    Switch on the flame again and cook on high flame, to thicken this reserved water into a thick sauce.

  10. 10

    Dissolve the rice flour in water and add it to the boiling sauce and mix well.

  11. 11

    As soon as the sauce starts thickening, check seasoning. Adjust any spice powders or salt, if required at this stage.

  12. 12

    Transfer the chop pieces back to the pan and coat well with the thick sauce. Switch off the flame and set aside till further use.

  13. 13

    In another bowl, break open the egg, and beat well adding a pinch of salt.

  14. 14

    In a flat dish, spread the required bread crumbs.

  15. 15

    Heat a thick bottomed pan, and add the required oil for grilling the chops.

  16. 16

    Dip each chop, first in the beaten egg and then coat well with the bread crumbs.

  17. 17

    Grill the coated chops in hot oil till crisp on all sides. When done, drain the chops on an absorbent paper.

  18. 18

    Serve these delicious Grilled Mutton Chops during parties or functions with a fresh tomato onion salad by the side!
