Ingredients

  • Pancake Batter -
  • 3 cupsAll Purpose Flour
  • 1 tbspSemolina
  • 2 tbspSugar
  • PinchSalt
  • 1 tspButter/Ghee
  • 1 tspYeast
  • 1 tspBaking Powder
  • 1 tspVanilla Essence
  • 1Egg
  • 2 cupsMilk (depends on the consistency)
  • Filling:
  • 1 cupAlmond Powder
  • 1 cupNuts (Walnuts, Pine nuts, Whole nuts and Pistachios chopped)
  • 1/4 tspNutmeg Powder
  • 1/4 tspCinnamon Powder
  • 1 tspRose Essence
  • Double Cream (for mixing)
  • 2 tbspCastor Sugar
  • Sugar Syrup:
  • 2 cupsSugar
  • 1 cupWater
  • 1 tspRose Essence
  • as neededFew Saffron Strands

Steps

  1. 1

    Pancake Batter: Beat egg, add the rest add warm milk and whisk till batter is mixed well. Let it rise for an hour. Make pancakes using pancake pan, with one teaspoon oil each time, do not overcook them. Keep aside when done.

  2. 2

    Filling: Put all except cream, mix well then add little by little cream to make dough like. Keep aside.

  3. 3

    How to make Qatayef: Take one pancake, scoop a tablespoon of filling and keep on semicircle, bring together the other side and seal, can use lai (flour water glue)

  4. 4

    Sugar Syrup: Boil sugar water and saffron to one string consistency, let it cool down add essence. Dip each qatayef in syrup and keep on platter. Sprinkle chopped pistachios

  5. 5

    To stick if not sealing well. When all done shallow fry in oil or ghee, to crispy brown qatayef.
