Ingredients

  1. 6Large Egg Whites
  2. 1/2 CupStevia
  3. 3 teaspoonsVanilla (Almond Vanilla)
  4. 2 CupsZucchini, Shredded
  5. 1 CupCoconut Flour
  6. 1/2 teaspoonBaking Powder
  7. 1 teaspoonBaking Soda
  8. 1 teaspoonSalt
  9. 1/4 CupWater
  10. 1/4 CupOlive Oil
  11. 2 teaspoonsCinnamon
  12. Nuts (optional)
  13. Carob chips (optional)

Steps

  1. 1

    Beat Eggs until light and fluffy. Add sugar, vanilla and oil. Blend well. Stir in grated zucchini. Add dry ingredients and blend then add water, Mix well. Fold in nuts or carob chips (optional). Turn into 2 well sprayed (olive oil spray) 9x5 loaf pans. Bake at 350* for one hour or until center is done.
