Peel the bottle gourd thickly, wash the peels thoroughly, and chop them finely.

Cut the bottle gourd peels into thin strips, similar to green beans. Add two small, chopped potatoes. Prepare the dish as you would a green bean stir-fry: heat mustard oil, then add cumin seeds, fenugreek seeds, onion, ginger, and garlic. Sauté, then add the chopped peels and potatoes.

Once the vegetables are tender, sprinkle with cilantro, cumin powder, and garam masala. Serve hot for a delicious side dish.
