This is a rustic soup that’s made in my area during the summer, when snow peas are finally in season.

Trim the ends off the snow peas, rinse them under running water, and cut them into thirds.

Peel the potatoes, rinse, and cut them into chunks. Rinse the tomatoes and cut them into pieces.

Pour the olive oil into a large pot with the garlic and tomatoes. Cook for a few minutes.

When the tomatoes start to simmer, add the snow peas, potatoes, and 1 cup of water. Season with salt and cook over low heat for about 20 minutes with the lid on, stirring occasionally and adding more water if needed. Continue cooking uncovered.

When the vegetables are tender, add the parsley and serve the minestrone warm. If you like, you can sprinkle some grated Parmesan cheese on top.
