Spicy Cajun chicken with potato wedges and buttered corn

Firstly, marinade chicken in cajun seasoning. Leave in fridge for an hour. Wash and dry potatoes very well. Slice into wedges. Put in a roasting tray. Drizzle with olive oil, sprinkle with thyme, salt and paprika. Cook at 200 for about 25-30 mins while you prepare the rest.

Wash and slice peppers. Cook in a little oil for 4-5 mins, sprinkle with paprika and salt

Meanwhile start cooking the chicken in a hot pan with a little oil

Slice open the bread, add the chicken, the peppers and your favourite salsa

Add some butter to a pan, brown off the corn for 2-3 mins on medium heat. Serve with the wedges and the corn on the cob
