Stir-fry the noodles with dark soy sauce and set aside. Cut the tofu into cubes and fry until golden. Then stir-fry the shrimp with chili paste.

Scramble the eggs in a pan. Add the noodles you set aside and stir. Then add the shrimp coated with chili paste.

Simmer the palm sugar with tamarind paste until well combined, then add to the pan.

Add the tofu and crushed peanuts. Season with fish sauce to taste. Sprinkle with chopped garlic chives and add the bean sprouts. Turn off the heat. Serve with cucumber on the side.
