Ingredients

1 tspbutter
large handful kale
2garlic cloves
1chicken breast (sliced into strips)
1/4courgette
30 gmascapone
10 ggrated parmesan
handfulchives (finely chopped)
handfulparsley (roughly chopped)
1lemon juice

Steps

1

Melt butter in pan (medium heat) & add kale and cook for 4 mins

Turn up heat and add garlic, chicken and courgette & cook for 5 mins/until chicken cooked

Pour in 2 tbsp water and reduce heat & add mascarpone and stir

When mascarpone has melted, turn up heat and add parmesan
