Remove stems from chillies then put chillies into a bowl cover with boiling water set aside for 30 minutes

In a pot add sliced onions, passata,garlic,cumin,vinegar and seasonings. Once chillies are rehydrated add to mixture along with the water they soaked in.

Bring to a boil then simmer for 90 minutes checking if u need to add water near the end so it doesnt stick

When thickened place 8 chillies into a sterilsed jar
- 5
Blend remaining chillies and sauce top over whole chillies
