Ingredients

4 servings
  1. 2red bell peppers
  2. 1yellow bell pepper
  3. 1orange bell pepper
  4. 1large courgette / zucchini
  5. 1large red onion
  6. 3 tbspolive oil
  7. 3 tbspbalsamic vinegar
  8. 2 tspsugar / sweetener
  9. 1 tspdried oregano
  10. 1 tspdried basil
  11. 1/2 tspgarlic powder
  12. to tastesalt and pepper

Cooking Instructions

60 mins
  1. 1

    Preheat the oven to gas 7 / 210C / 425F and line a roasting tin with foil

  2. 2

    Chop the peppers and onions into inch squares and thickly slice the courgettes and halve each round. Place on the roasting tin

  3. 3

    Drizzle the oil and balsamic over, then shake over the oregano, basil, garlic powder & sugar and season well with salt and pepper. Toss well to coat

  4. 4

    Roast for 35 minutes or until beginning to caramelise and turn golden

  5. 5

    Delicious with chicken, pork and fish dishes
