Mu Shu Stir-Fried Fresh Vegetables

In Chinese cuisine, there's a classic home-style dish called "Mu Shu Pork," made with pork, carrots, cucumber, and eggs. "Mu Shu" refers to eggs. In the past, in northern imperial courts, eunuchs avoided saying the word "egg" directly; since the soft yellow of scrambled eggs resembles the osmanthus flower, they used the elegant name "Mu Shu" instead. During the hot summer, enjoy a healthy and refreshing dish. Mu Shu cooked with vegetables and the high fiber of pineapple makes it even more delicious.

Ingredients

  1. 4large eggs
  2. 1/2fresh pineapple
  3. 1 ozwood ear mushrooms (about 30 grams)
  4. 1small onion
  5. 7 ozcelery (about 200 grams)
  6. 2scallions
  7. 1 teaspoonminced ginger
  8. [Seasonings]
  9. 1 teaspoonrice wine
  10. 2 tablespoonssoy sauce
  11. 1/2 teaspoonsugar
  12. To taste, sesame oil

    Prepare the ingredients. Rinse the wood ear mushrooms and soak them in water until rehydrated. Mix the rice wine, soy sauce, and sugar from the seasonings and set aside.

    Dice the wood ear mushrooms and cut the pineapple into chunks after peeling. Rinse the scallions and slice them thinly.

    Dice the onion.

    Peel and mince the ginger.

    Rinse the celery and slice it thinly.

    Beat the eggs. Heat a pan and add 2 tablespoons vegetable oil. Scramble the eggs until fluffy so they can better absorb the sauce. Break into small pieces with a spatula and set aside.

    In the same pan, sauté the minced ginger until fragrant, then add the diced onion and stir-fry.

    Add the diced wood ear mushrooms and sliced celery, and stir-fry together.

    Return the cooked eggs to the pan and pour in the prepared seasoning mixture. Stir-fry to combine and let the flavors absorb.

    Add the sliced scallions and stir-fry. Drizzle with sesame oil to finish and mix well.
