Ingredients

  1. 4 Tbssoftened butter
  2. 1full chicken
  3. herbs and spices to your taste
  4. 4medium potatoes parboiled and cubed
  5. 3sweet potato cubed
  6. 1onion cubed
  7. 1yellow pepper cubed

Cooking Instructions

    Put your fingers between the chicken and it's skin to separate the two. Do it gently to avoid tearing of skin.

    Mix herbs with butter and rub all over the chicken skin, inside the chicken and between skin & body.

    Roast chicken at 180degrees Celsius until almost cooked but not yet brown.

    In a separate tray put all your vegetables (potatoes, sweet potato cubed, onion cubed, yellow peppers cubed) and a bit of butter with seasoning. Put in oven until both chicken and veggies are nicely brown.
