Yam Fingers

Place the yam slices in a pot with some water. Bring it to a boil over high heat. Reduce the heat and simmer until yam is cooked through. Make sure it is not too soft or it all goes mashy.

In a large bowl mix all the three flours, chilli powder, salt and water together into a paste. Gently mix the yam slices and coat them with batter.

Heat oil in a wok. Deep fry the yam slices until golden brown over a medium heat.

Remove them from oil unto paper towel to drain the excess oil.

Serve the crispy and crunchy yam fingers hot with tomato sauce or mint chutney.
