This is one of the easiest meals to prepare, you can call it githeri or in lay mans language gut. I remember how in my high school days its was the meal of the day a staple dish and we used to call it kawa... Meaning kawaida/regular or kokoto to mean ballast which was taken during lunch and dinner time... It had a lot of weevils and the maize was so hard that during boiling the legumes the maize would burst out of its shell for lack of better words true to its word its was full of nutrients because that's how I grew to be the woman that I am today ...

Ingredients

Serves 8 servings
  • 1 kgYellow beans
  • 4Large Maize
  • 2Onions
  • 3Tomatoes
  • 1 bunchCoriander
  • 1Capsicum
  • Cooking oil
  • 2green chillies
  • 1 CupWater
  • 1 tspSalt

Steps

  1. 1

    Prepare the maize and beans wash and bring to boil in a pressure cooker which takes roughly 45 mins to cook well. Then drain in a strainer to release the extra water.

    Wash and Chop the onions, grate the tomatoes, chop the coriander and capsicum, cut green chilli into small pieces.

    Get a clean cooking pot... place on medium heat then add cooking oil,Fry the onion till brown, add tomatoes, chillies and salt cook and stir for a while. Add the already pre-boiled cereal and stir to incorporate the flavours together then add the cup of water and place the lid on to bring the food to boiling.

    Look for a clean plate and serve the githeri, garnish with the coriander leaves and diced capsicum you can add extra chopped tomatoes and green chilli (optional).
