Delicious vegetable fritters that are very easy and quick to make. They turn out fluffy and soft. Recipe from my sister Carmen.
Steps

First, wash and peel the zucchini.

Grate the zucchini using a coarse grater and sprinkle with a little salt. Let it sit in a colander for about 30 minutes to release excess water.

Transfer the zucchini to a bowl and add the eggs. Mix well.

Add the minced garlic, flour, and baking powder. Stir until there are no lumps.

Finally, add the tablespoon of olive oil and mix. Let the batter rest for 15 minutes.

Heat a skillet with plenty of oil and drop spoonfuls of the batter into the hot oil.

When the fritters are golden and puffed up, transfer them to a plate lined with paper towels.
