Get all your ingredients ready! Soak the peas overnight so they hydrate well. The next morning, cook them in the same soaking water with 2 or 3 bay leaves. That's it. When they're tender, turn off the heat, drain, and set aside the cooking liquid. Slice the chicken into strips and season with dried oregano, black pepper, and cumin. Do the same with the onion and tomato, then set aside.

About 30 minutes before lunch, heat a little good-quality oil in a small pot. When hot, add the onion and cook until translucent. Add the garlic, tomato, and turmeric, stirring until it forms a paste. Add the cooked peas and 1/2 cup of liquid, stir, then add the seasoning packet and cook for just 5 minutes to blend the flavors.

Add the bell pepper, taste, and adjust the seasoning. If everything tastes good, you're done. If you think it needs something, add it! Note: If the mixture is too soupy, dissolve 1 tablespoon cornstarch in 3/4 cup cold water, add to the peas, stir, and it's ready! Let it rest while you... In a large skillet over medium-high heat, add a splash of good-quality oil. When hot, add the chicken strips.

Do NOT stir. Let them brown on one side, then turn them over. (I used a large skillet.) When the chicken is cooked, push it to one side and add the onion, cooking for about a minute on each side. Then mix the chicken and onion together, and add the tomato on top, stirring gently so the tomato doesn't break apart. Finally, adjust the seasoning and add salt to your taste. Turn off the heat and sprinkle chopped parsley on top!

Serve generously! Plate white rice, peas, and top with the chicken fillets. On the side, add half an avocado per person. Delicious! Only 30 minutes. The secret is to have everything ready so you don't forget anything and serve immediately. Note: I didn't add any salt to the peas because the seasoning packet already contains salt. Keep that in mind.
