First, soak the white beans for at least 8 hours.

Add a drizzle of olive oil to the slow cooker, then add the chopped vegetables (zucchini, potatoes, bell pepper, and carrots). Add the diced tomatoes (I used canned). [You can also add onion and garlic at this step if you like. I skip them because they don't agree with me.]

Cut the smoked pork shoulder into small pieces and add to the slow cooker.

Add a few pork ribs.

Drain the soaked beans and add them (without the soaking water). Cover with water. Add salt and a little paprika. Cover and cook on low for 7 hours. After 6 hours, stir everything to help it thicken, then let it finish cooking.
