Ingredients

  1. vegetable fried rice
  2. 2 cupsbasmati rice or long grain rice, rinsed (or 4 cups leftover cooked rice)
  3. 2 tbspoil (sesame oil preferred)
  4. 3garlic cloves, chopped
  5. 4 cupsvegetables (spring onion, capsicum and green peas)
  6. 1 tbspsoy sauce
  7. 1Chicken cubs
  8. 2 tspwhite vinegar
  9. 1/4 tspground black pepper
  10. to tasteSalt
  11. Chopped spring onions (or scallions), to garnish
  12. Hot chilli sauce for garnish

Cooking Instructions

    Soak basmati rice in water for 20 minutes. Drain.and cooked rice in boiling water for 6-10 minutes. Drain. Set aside.

    Mean while heat oil in a wok or large frying pan over high heat. Add garlic and sauté for 1 minute or until aromatic. Add chicken cubs,vegetables.

    Stir fry for 3-4 minutes or until tender. Stir in cooked rice.
    Add soy sauce, white vinegar and ground black pepper. Stir fry for 3 minutes.

    Garnish with chopped spring onions and hot chilli sauce.
    Now vegetable fried rice ready.
