After baking all kinds of bread loaf recipes, I managed to create a simple version that's to my tastes.
I use rice flour for baking. Recipe by Chibigorisu
Cooking Instructions
- 1
Put all the ingredients in a bread machine, and start the regular bread program.
- 2
This is how it looks baked.
- 3
If baking the bread in a pan: Put all the ingredients except for the butter in a bread machine and start. After 6 to 7 minutes, tear the butter into little pieces and add to the machine. Let the machine handle things up to the end of the 1st rising.
- 4
After the 1st rising is done, divide the dough into 3 pieces and rest for 10 to 15 minutes.
- 5
Deflat lightly, and roll out into an oval.
- 6
Fold in the sides so that they overlap a little, then roll up. Seal the ends lightly.
- 7
Put the rolled up pieces in an oiled bread pan, and leave to rise again (2nd rising). The time depends on the season and room temperature, but it takes 1 to 1 1/2 hours.
- 8
When the dough has risen up to the rim of the pan, bake in a 180°C oven for 25 minutes.
- 9
When it has finished baking, to prevent the loaf from collapsing, drop the bread pan once from a height onto your work surface, then take the loaf out of the pan.

If the surface is getting burnt, cover with aluminium foil, and turn down the temperature.*When you are turning the pan during Step ⑦, do it quickly so that the inside temperature of the oven won't drop. Chocolate Marble Bread Made in a Bread Machine Chocolate Marble Bread Made in a Bread Machine
I made this chocolate marble bread at my children's request. An important point of Step 8 is to leave space for the dough to rise after you put it back in the bread pan.The second rising may not be long enough when made in a bread machine so the pattern may come out a bit checkered.Personally, I think it might be better to let the dough rise for a second time, then bake it in the oven, but it tastes just as good made in a bread machine, and you can still see a nice marbled pattern.
