Soji is a rich comforting, creamy starter or dessert that is served in most indian households, I normally do a large quantity at most functions but I have simplified the recipe to serve 5 to 8 people, you will really enjoy this recipe, soji is like a hug in a bowl 😄please remember my pictures shared are for a very large quantity but you will do the same in a pot 😊

Ingredients

5 people
  1. 500 gsemolina
  2. 3cinnamon sticks
  3. 100 mlfresh cream
  4. 600 mlmilk
  5. 5 mlegg yellow
  6. 500 gbutter
  7. 300 mlcondensed milk
  8. 10 gCardamom seeds

Cooking Instructions

  1. 1

    Fry the butter with the cinnamon sticks and cardamom seeds

  2. 2

    Add the semolina and fry until brownish

  3. 3

    In another jug, mix the milk,fresh cream, egg yellow and condensed milk

  4. 4

    Pour the mixture into the fried semolina and mix well

  5. 5

    When smooth take of the stove, cover with a foil and leave aside

  6. 6

    After a few minutes fluff up with a fork

  7. 7

    You can serve in a bowl with dessert cream and cloured almonds

  8. 8
