Burdock Root Consomme Soup

I was thinking of a dish to make with burdock root and I came up with soup.
You can eat lots of burdock root if you use it in soup.

The soup has a gentle taste so you can enjoy the deliciousness of the burdock root.
If the taste is too weak for you, add an extra 1/2 - 1 teaspoon of consomme.
The burdock root skin is the most fragrant part, so don't peel off. If you do, you will miss out on the nice aroma. Recipe by Kaiko

Ingredients

2 servings
  1. 100 gramsBurdock root
  2. 1/4Onion
  3. 2 sliceBacon
  4. 1 dashFresh parsley
  5. 2 tspOil
  6. 500 ml■Water
  7. 1■Consomme cube
  8. 1 dash■ Salt, black pepper

Cooking Instructions

    Scrub the burdock root with a brush and wash off the dirt. Slice it finely and soak in water.

    Thinly slice the onion and cut the bacon into 1 cm pieces. Finely chop the parsley.

  3. 3

    Heat oil in a saucepan, add the bacon and onion and fry until the onion has softened. Then add the burdock root and fry so the oil is distributed evenly.

    Add water and consomme and simmer. When the burdock root has cooked through, season with salt and black pepper. Transfer to the serving dishes and sprinkle parsley to finish.
