Step 1 – Marinating the Wings
Add everything from #2-#11 in the ingredient list to wings. Mix well. Then add flour and baking soda and mix well. Marinate for at least 30 mins. - 2
Step 2 – Frying the wings
Heat enough oil for deep frying the wings. I like to do it in med lo heat. The wings crisp nicely and stays juicy. Fry the wings for 10-12 minutes. Rest them on a rack or plate so that excess oil drips off. You can have the wings just like that too. Those spices add great flavor to the wings. - 3
Step 3 – Making the Naga Mix
Take 3 tbsp oil from where the wings were fried. It got infused with fantastic flavors from the wings. Add the sliced onions and cook on med heat till onions are soft. Add garlic ginger paste and garam masala. Cook for few mins. Then add the sliced garlic and chilli flakes. Cook for few mins and then add rice vinegar and your favorite bbq sauce. It will balance out the spiciness beautifully at the end. Then add 1 tsp of Naga pickle. - 4
Add more or less depending on how spicy you want it. Cook for few mins and let all the flavors mix in. Add few whole chillis and the wings. Give it few good tosses and its done. Enjoy !!
