Ingredients

2 servings
  • 1red pepper - washed and chopped
  • 200 gchicken breast - washed & chopped
  • 250 gpacket of ready cooked black rice
  • Small tin of sweetcorn - drained
  • Chopped red onion
  • to tasteCajun seasoning
  • to tasteDried chilli
  • 2-3 spoonfulspassata sauce
  • to tasteSalt
  • Cupwater
  • Olive oil

Steps

  1. 1

    Fry pepper and onions in a little oil for 2-3 mins

    Add chicken and cook for another 3-4 mins

    Add spices and passata. Stir and cook on medium for 4-5 mins

    Add rice and cup of water, stir

    Add sweetcorn and continue cooking for 2-3 mins
