1red pepper - washed and chopped
200 gchicken breast - washed & chopped
250 gpacket of ready cooked black rice
Small tin of sweetcorn - drained
Chopped red onion
to tasteCajun seasoning
to tasteDried chilli
2-3 spoonfulspassata sauce
to tasteSalt
Cupwater
Olive oil

Steps

1

Fry pepper and onions in a little oil for 2-3 mins

Add chicken and cook for another 3-4 mins

Add spices and passata. Stir and cook on medium for 4-5 mins

Add rice and cup of water, stir
5

Add sweetcorn and continue cooking for 2-3 mins

Healthy one pan weeknight meal in a jiffy :)
