Wash and peel your potatoes both sweet and irish. Dice them, add little salt and boil till soft.

In a clean bowl, mash them and add your seasoning, curry, spices, onions and scotch bonnet, add little flour and bread crumbs and mold it.

In a small container, add cornflour and water and then your black pepper, mix well. Dip your molded potatoes into the corn flour mixture and then dip into mashed cornflakes and deep fry till brown.

Add a little oil into a pan add then diced tomatoes and onions, add seasoning and fry.
