If I make Char Siu (BBQ pork), or have leftovers from a Sunday roasting joint, this is one of the ways I like to use up the leftovers. Some larger supermarkets now sell Char Siu pork ready made too, for convenience. This is also a great way to use up leftover rice, as day old rice works best for this as it's drier. I usually use basmati or long grain.

Ingredients

10 mins
1 serving
  • day old or pre-cooked rice,
  • Char Sui/roast pork, cut into small cubes,
  • Spring onion, sliced finely,
  • Light Soy Sauce, (around 1-2tbsp),
  • Vegetable/Sunflower oil for frying
  • Handfulpetit pois peas,
  • 1/2 tspminced garlic,
  • 1 pinchsalt & white pepper to season,
  • 1 tspMSG (optional)

Steps

  1. 1

    Heat up a wok over a high heat. Add around 1 1/2 tbsp oil and add the whites of the spring onion. Fry whilst stirring for around 20 seconds. Add the garlic. Fry for a couple more seconds.

    Add in the pork, fry quickly and stir through with the onion/garlic for around a minute until warmed through.

  3. 3

    Add the MSG, stir fry for a few seconds and stir through the other ingredients. Add in the rice, combine everything together. Season with salt and pepper then drizzle over the light soy sauce. Add in the peas. Stir then give everything a good toss together. Fry for a further two minutes until the rice begins to 'pop' in the wok.

    Garnish with the greens of the spring onion. Serve up and enjoy! This dish is lovely on it's own, or as a side to other Chinese dishes.
