Aloo Tomato Sabzi is lightly spiced, sweet and sour sabzi.
Steps

Heat up the oil in kadhai on medium flame. Once oil is heated add mustard seeds and let it crackle. Add hing and then add chopped tomatoes. Saute for a minute.

Now add spices like turmeric powder, red chilli powder, dhania jeera powder, salt and jaggery. Mix all well and cook till tomatoes gets cooked.

Now add chopped boiled potatoes, water, crushed kasuri methi and garam masala. Mix all well and cook further for 2 mins. Switch off the flame. Garnish with coriander leaves and serve hot with roti.
