Ingredients

  • 4medium sized Boiled Potatoes
  • 3medium sized Tomatoes chopped
  • 1 tbspOil
  • 1 tspMustard Seeds
  • PinchHing / asafoetida
  • 1/4 tspTurmeric Powder
  • 1 tspRed Chilli Powder
  • 1 tspDhania Jeera / coriander , cumin Powder
  • 1.5 tbspJaggery
  • to tasteSalt
  • 2 tbspWater
  • 1 tspKasuri Meethi crushed
  • 1/4 tspGaram Masala
  • As requiredChopped Green Coriander Leaves for garnishing

Steps

  1. 1

    Heat up the oil in kadhai on medium flame. Once oil is heated add mustard seeds and let it crackle. Add hing and then add chopped tomatoes. Saute for a minute.

  2. 2

    Now add spices like turmeric powder, red chilli powder, dhania jeera powder, salt and jaggery. Mix all well and cook till tomatoes gets cooked.

  3. 3

    Now add chopped boiled potatoes, water, crushed kasuri methi and garam masala. Mix all well and cook further for 2 mins. Switch off the flame. Garnish with coriander leaves and serve hot with roti.
