Heat oil in a kadhai. Temper with cumin seeds, curry leaves. Let them splutter and loose their aroma. Add onion chopped, green chilli slit. Add the snake gourd chopped.

Add turmeric, kashmiri red chilli powder, salt,little sugar. Let the vegetables lose it's water. Cover and cook on low flame until the snake gourd becomes soft tender.

In the meantime, crack open an egg in a bowl. Add slight salt and beat well.

Open the lid. Check for the doneness of the vegetable. Add the beaten egg and after 10-15 sec start to mix. When the egg forms a scrambly texture off the flame. Serve hot with roti, paratha or plain rice.
