If I'm pressed for time but I still want to make a nice and healthy meal for my family, this meal is a frequent go-to. It's also quite budget friendly.
If you're not someone who eats liver, you can substitute with pork or beef mincemeat.

Steps

Saute the onions, peppers and garlic in cooking oil until browned. Add tomato paste and chutney to the veggies and saute for a further 2 or 3 minutes.

Add the ox liver to the sautéing veggies and drizzle over some curry powder. Add half a cup of water to the liver. Cover and cook for a further 10 minutes.

Serve the liver stew with rice.
