Steps
- 1
Place the beef onto a ovenproof tray. Pat dry with kitchen roll.
- 2
Blitz all the rest of the ingredients in a blender until it forms a smooth paste like mixture.
- 3
Coat the beef evenly with the marinade. Allow to sit in fridge for a minimum of 4 hours but for best flavours allow to sit overnight.
- 4
Turn your oven on to 180c.
- 5
Transfer to the oven and roast the beef until cooked through. I don't know how long it took to cook through as I used a meat thermometer and I really wasn't keeping track of timings for this recipe but I think it took around 60 minutes to 90 minutes to cook through.
- 6
Allow to rest for 10-20 minutes before serving.
