Zero Oil Vegetable Rice

Rice is the most widely consumed staple food in India and all over the world. And once we add loads of veggies to it, it turns into complete meal. Yes, I am talking about replacing your lunch meal with this plate of goodness. I used brown rice instead of white but you can make this recipe with white rice too.
The beauty of this recipe is that you can make it in zero oil without compromising the taste. I totally loved it.

Ingredients

1 serving
  • 1 cupbrown rice
  • 1onion, sliced
  • 1tomato, sliced
  • 1carrot, juliennes(par-boiled)
  • 1/4 cuppeas
  • 1/4 cupbroccoli florets(par-boiled)
  • 1/4 cupred bellpepper, diced
  • 1/4 cupgreen bellpepper, diced
  • 1 tbspginger-garlic paste
  • 1 tspred chilli powder
  • 1/2 tspamchoor powder
  • 1 tbspcoriander powder
  • to tasteSalt

Steps

    Wash the rice and let it soak for 20 mins in water. Now strain this water from rice. Take a microwave safe bowl, add rice and 2 cups water to it. Keep it in microwave for 15 mins on full power. It will be ready in 15 mins. Also you can cook it in cooker as usual.

    Meanwhile, heat a broad non-stick pan. Once heated add onion to it. Sauté it for few seconds and add ginger-garlic paste. Now keep sautéing untill the raw smell of garlic is gone.

    Gradually add tomatoes and stir untill onion turns golden brown in colour.

    Now add all the vegetables and spices altogether. Mix well.

  5. 5

    Cover with lid for 2 mins.

  6. 6

    Now after 2 mins, add cooked rice and let all the veggies incoporate well with rice. Saute on low flame for a min.

  7. 7

    Serve with curd/corinader-mint chutney.
