Braised minced pork with potato and carrot

Marinate the minced pork with light soy sauce, sesame oil and white pepper.

[Optional] Place the eggs in a bowl and cover with the soy sauce and mirin, leaving it to cure while you make the braised pork.

Using a high sided frying pan, place the pan on medium-high heat. When it is hot, add cooking oil followed by the shallot, garlic and onion. Stir fry it occasionally until the onion caramelized. Push it to one side of the pan.

Add the minced pork into the pan making sure it is flat. Do not stir it until it is browned on one side (less than 1 min). Flip it over and brown the other side. Once well browned on both sides, break the mince pork apart into smaller pieces and mix it together with the rest.

Add in the remaining ingredients - potato, carrot, sugar, chicken stock and dark soy sauce. Make sure the ingredients are well mixed. Place a lid over the pan and leave it to braise for 15-20mins or until carrot and potato is cooked through.

Serve with rice, vegetables and the soy-cured eggs
