Ingredients

  1. 3/4 cupsunflower oil 🌻
  2. 1egg
  3. 1 cloveblack garlic (I used one since it's my first time making it, but you can use 3 or adjust to your taste)
  4. 1 tablespoonlemon juice 🍋
  5. 1/2 teaspoonpepper or to taste (optional) if you want a spicy touch 🌶 for something like patatas bravas
  6. Salt to taste

Cooking Instructions

    Place the oil in a tall mixing glass, just slightly wider than the immersion blender. This helps the ingredients emulsify well. If it's too wide, the mixture will spread to the sides and the aioli won't form.

    Add the room temperature egg, black garlic, lemon juice, salt to taste, and pepper (if using). Place the immersion blender at the bottom and start blending without moving it for a few seconds. When it starts to thicken, lift it slightly to one side and then the other. Finally, lift it from the bottom and blend any remaining oil on top for a few more seconds with gentle movements.
