Avocado and Cucumber Gazpacho

While for my taste, nothing beats the classic gazpacho with its many variations, it's always good to try it with different ingredients.
This time, I decided to combine a cucumber and an avocado, creating a liquid salad with a delicious flavor and a beautiful light green color.

Peel and chop the cucumber, then place it in a blender-safe container.

Cut the avocados in half, remove the pits, scoop out the flesh with a tablespoon, chop it, and add it to the cucumber.

Peel the garlic and add it to the chopped cucumber and avocados.

Add olive oil, salt, and the strained lemon juice, then blend until smooth.

Add cold water until you reach your desired consistency.

Taste and adjust the seasoning by adding more salt, olive oil, or water as needed.

Serve very cold.
