Steps

For the Katoris:

Mix all the ingredients and make soft dough using warm water.

Make small puris.

Grease designer moulds or katoris with little oil and place the puris on them and press properly.

Pierce with fork.

Heat oil in pan and put the moulds or katoris in the oil and deep fry the puris till golden.

Remove from oil, let it cool a little and then remove the fried puris by loosening the edges.

Filling 1:

Finely chop onion and capsicum.

In a pan, heat ghee and add all the ingredients except tulsi leaves and saute till veggies are soft.

Remove from fire and add tulsi leaves and mix well.

Let it cool.

Filling 2:

Finely chop onion, tomato and capsicum.

In a pan, heat oil and add tomato and saute.

Remove the skin of tomato.

Add all other ingredients, mix well and saute till veggies are soft.

How to assemble:

Put both the prepared fillings in the cooled katoris.

Garnish with grated cheese and the chaat is ready to serve.

Serve with sev, masala curd, tamarind chutney (optional).
