Cook the pinto beans with the garlic cloves and half the onion. When the beans are almost done, add salt and the whole serrano peppers.

While the beans are cooking, boil the cubed pork skin separately for about 1 hour, then set aside.

Fry the bacon, sliced hot dogs, and the remaining onion (diced), then set aside.

Add the drained pork skin (without its cooking liquid) to the beans and cook for about 10 minutes. After that, add the fried hot dogs, bacon, onion, chopped cilantro, and beer. Let the flavors blend and allow the alcohol from the beer to cook off.

Finally, add the can of sliced pickled chili peppers with only half of its vinegar (or to taste). Let it simmer for about 5 more minutes.
