Ingredients

Serves 4 servings
  1. 1 cupparboiled rice (precooked, non-sticky)
  2. 10 1/2 ozbeef sirloin, cut into medium pieces (about 300 grams)
  3. 10 1/2 ozchicken breast, cut into medium pieces (about 300 grams)
  4. 2pork sausages
  5. 3 cupsvegetable broth
  6. 1 cupcanned peas
  7. 4Brussels sprouts, quartered (or green cabbage, thinly sliced)
  8. 1red bell pepper, diced small
  9. 1/2 cupgreen onions, thinly sliced
  10. 2 clovesgarlic, finely chopped
  11. 2 tablespoonsparsley, finely chopped
  12. 2 tablespoonscelery leaves, finely chopped
  13. 1 tablespoonsmoked paprika
  14. as neededOlive oil,
  15. 1 tablespoonground cumin
  16. 2 tablespoonsketchup
  17. 1/2 cuptomato paste
  18. as neededSalt and pepper,

    First, bake the sausages in the oven for about 15 minutes. Slice them and set aside. In a skillet, add 1 tablespoon olive oil, then add the green onions and garlic. Sauté, then add the tomato paste and ketchup, season with salt and pepper. Cook for a few more seconds and set aside.

    In a large pot, add 2 tablespoons olive oil. Heat, then add the bell pepper, 1 tablespoon parsley, and the beef sirloin. Season with salt and pepper. Brown for about 3 minutes, stirring constantly. Add the chicken and cumin. Let it brown a bit, then immediately add the rice. Stir, add the 3 cups vegetable broth and smoked paprika.

    Reduce the heat to medium. When the liquid is almost absorbed, add the Brussels sprouts, sausages, peas, and finely chopped celery leaves. Finally, add the reserved tomato paste mixture and check the seasoning.

    When the rice is almost dry, lower the heat to low, cover, and cook for 10 more minutes. Serve hot, garnished with the remaining parsley to enhance the flavor.
