I usually try different biryanis, earlier egg biryani and veg biryani and kheema biryani were great outcomes, so tried with mutton this time.

Marinate mutton (should be medium pieces with bone) with curd, salt, chilli powder, turmeric powder, ginger garlic paste, lemon juice, fried onion, coriander leaves mint leaves, green chilies and add spice (cardamom, cloves, shahi jeera, cinnamon, pepper corns). Marinate for about 2-3 hours (I do some times even more or less. More time marinated more delicious. Do not exceed 12 hrs).

Rinse basmati rice and soak for 10 mins.

Cook rice by adding salt (consider the amount of salt you ve added in marination) add shahi jeera, cloves, peppercorns, cinnamon, and bay leaves, javitri, starflower. Cook rice only till 50 % (imp step as it’s instapot).

In off mode Add oil in insta pot add marinated meat, top it with rice, top it with coriander mint leaves and saffron.

Put the insta pot mode to meat/ stew option (approx timer sets to 30 mins) once done immediately check if done or not.
