I based this on @nuriritmica.fit's fit fig cake recipe and made slight modifications. Mainly, I added one more egg white and reduced one yolk; added one more apple; all the flour is whole grain oat flour. Result: it's a bit more compact but with a delicious flavor and even more "fit." We love it and I make it almost every week!!!!!

Ingredients

6-8 servings
  1. 3/4 cupwhole grain oat flour (about 110 grams)
  2. 1egg
  3. 3egg whites
  4. 2apples
  5. 1 1/2 tablespoonsagave syrup (about 20 grams)
  6. 1/2 teaspoonbaking powder
  7. 1 teaspoonground cinnamon

Cooking Instructions

    Chop and roast the apples for a couple of minutes. Puree them and set aside.

    Preheat the oven to 350°F. Prepare a 6-inch pan by greasing it well. Separate the egg white from the egg and beat all the egg whites until you get a fairly firm meringue.

    Add the yolk, apple puree, and agave syrup. This time, beat just enough to combine.

    Add the flour and cinnamon in 2 or 3 batches and fold gently until combined.

    Bake for about 35 minutes until done.
