I had extra apples around and wanted to make a cake, so I researched apple cake recipes, combined a few and came up with this. It's very moist and tasty.

This cake can be served for breakfast or bunch like a coffee cake . It's also great as a snack or a dessert. It freezes great in slices to take out when you need it. Add a frozen slice to a lunch bag to thaw and be ready for lunch!

I love love LOVE yeast breads but I suck at baking them for the most part. But this recipe, which is a redo of one I found 15 years ago, is a yeast bread, but a quick, instant gratification yeast bread. I love my crumbles and I love soft, fluffy and a little bit chewy sweet cakes. I’ve made this a few different ways. This dough has endless possibilities. I’ll publish another soon.

This is a variation on a recipe I once copied from some printed source. It's a family favorite that I've been making since high school.Keep whipping the eggs until pale and thick.The batter is light enough to rise even without baking powder.You can use vegetable oil instead of olive oil, but it tastes better with olive oil.Sprinkle some cinnamon powder on the apples if you prefer. I hate sticky, watery apple cakes so I reduced the liquid in the apples before baking to prevent that from happening.Make sure to beat the butter well until white and fluffy, this will make the cake moist!If you use a better quality flour it's probably OK not to sift it.
